RECIPES!!!

Looking for something fast, tasty and paleo? I came across Fast Paleo and am really impressed by how easy and tasty the recipes are.  It's a recipe sharing site so the diversity is awesome and new recipes are added regularly.  Here are a few of my favorite recipes.  Try them out and report back with your findings.

Sweet Potato & Sage Crusted Chicken

Ingredients:
1 large sweet potato, baked
1 egg
1/2 t. salt
1 t. fresh chopped sage
1 T. coconut flour
2 chicken breasts
Optional: 1/4 c. melted ghee or pastured butter for drizzling


In a medium mixing bowl, beat the egg with the salt and sage.
Cut your baked sweet potato in half and scoop out the soft insides into the bowl with the egg mixture.
Use a fork to beat the sweet potato into the egg mixture. Add the coconut flour and mix well.
Cut the chicken breasts into halves or thirds, depending on size. Pat dry.
Place chicken breast pieces in a 9×13 baking dish.
Spread the sweet potato mixture evenly over the top and sides of the chicken pieces.
Bake at 400F for 30 minutes, then broil for 2 minutes to add color.
Optional: Serve with a spoonful of melted butter or ghee drizzled on top.

Apple & Plantain Crisp:

Ingredients:
3 apples, peeled, cored, sliced thin
2 plantains, sliced thin
1/4 c. almond meal
1/4 c. chopped pecans
1/4 c. shredded coconut
2 T. cinnamon, divided
2 T. nutmeg
2 T. vanilla
4 T. coconut oil, melted
4 T. brewed coffee (optional)

Preheat your oven to 350
Peel, Core and Slice your Apples and Plantains and place in a bowl and toss with 1 tbsp Cinnamon, 1 tbsp Nutmeg
Place all remaining ingredients in another bowl and mix well til it gets a little crumbly, this will be your Crisp mixture
Prepare a 9×9 baking dish with Non-stick spray, or coat it with Coconut Oil
Place your Apple and Plantain mixture all over the bottom, then top with the Crisp mixture.
Bake, uncovered for 45minutes-1hour until the Apples are at your desired texture and until the Crisp topping has hardened and browned.
Spoon it out into 5 bowls, and if your feeling daring or want to impress some people with an awesome Paleo dessert
